Founded in 1923. Kojimaya Sohonten is a famous Niigata specialty restaurant, Hegisoba, which has been presented to the Imperial Family six times, including the current Emperor and Empress. Hegisoba is a type of soba noodles that uses seaweed called Funori as a binder. This soba is chewy and smooth, making it easy to swallow. While inheriting the traditional manufacturing method devised by Jutaro Kobayashi, the founder of Kojimaya Sohonten, the second generation, Shinichi Kobayashi, newly developed Kojimaya Sohonten's traditional ``dried noodles''.It is still a popular product of Kojimaya Sohonten, and is manufactured using high-quality buckwheat flour carefully hand-milled in a stone mill and funori as a binder.
